Black currants in their own juice are similar in consistency to jelly, which you would like to add to all kinds of dishes, especially baked goods and dairy products. And preliminary grinding through a meat grinder allows you to achieve the most uniform consistency.

We measure out the required amount of black currant and sort out the berries, removing all twigs and other unnecessary debris.

After that, we wash the berries, without making any special efforts, and dry them by transferring them to a colander.

Then we pass the prepared berry through a meat grinder until a mass is obtained that resembles mashed potatoes in its consistency.

Pour granulated sugar into the resulting berry mass and leave the contents alone for about 30 minutes. During this time, the berry will give its juice, and the sugar, in turn, will completely dissolve.

After this time, we transfer the berry mass to a thick-walled saucepan and bring the contents to a boil. Then we boil for another two minutes and remove from heat.
