How and when to collect buds?

When preparing raw materials for jam, several recommendations should be followed:

  • collect cones in a pine forest no later than the end of May or mid-June;
  • choose pale green resinous specimens that have not yet hardened;
  • collect cones at a distance of at least 1 km from the roadway and industrial enterprises.

The most useful will be young shoots taken from healthy trees that do not have any traces of mold or rot. All buds should be intact, with no dents or dark spots.

The number of cones for making jam can be different and depends on the number of people who will eat it. For a small family, on average, about a kilogram of young shoots are collected.

Jam preparation method

The collected cones must be sorted out, thoroughly cleaned of debris and insects, and rinsed with water. Raw materials are placed in an enamel container, poured with cold water and left overnight. Before making the jam, the cones are well dried. Most often they are boiled whole, but if desired, they can be cut into pieces.

Classic recipe:

  • 100-120 cones are poured with 2 liters of water;
  • send to cook on low heat;
  • after 1 hour, add 1 kg of sugar;
  • cook for another 1.5-2 hours.

The jam is periodically stirred and the foam is removed from it. Half an hour before readiness, a glass container is prepared, into which the sweet product is distributed. Seal the cans with nylon lids.

In addition to the classic recipe, there are other ways to make pine cone jam. It can be made with the addition of citrus fruits, pine nuts, and various berries. Instead of sugar, honey is sometimes used (in this case, the main component is simply poured with a sweet mass, so traditional cooking is not required).
