Choux dumplings

Strawberry dumplings are a great summer breakfast. A feature of this recipe is the choux pastry - tender and airy in its structure, after steaming dumplings it fully reveals its taste.

Pour a glass of flour into a deep container for making dough and fill it with boiling water. Mix the resulting mass well with a spoon and leave for 15-20 minutes to brew the dough.

Pour the remaining flour onto the work surface, make a depression in the middle. Put the custard mass into the recess, add salt and knead the hard dough.

Form a ball from the finished dough and leave the dough to rest for 10-15 minutes.

At this time, we are preparing the filling. Separate the strawberries from the tails, put in a colander and rinse thoroughly under cool running water. We leave the strawberries in a colander to drain the water. If the strawberries are large, cut them into small pieces. Our strawberries are small - you don't need to chop them.

Separate a small part from the dough, roll it out on a cutting board sprinkled with flour into a thin sausage. Then we cut the sausage into small pieces 3-4 cm long.Each piece is dipped in flour and rolled out with a small flat cake. The thickness of the dough should be about 5 mm, no less.

We put several pieces of strawberries in each cake, sprinkle with a small amount of sugar, according to your taste, and roll the dumpling, pinching the edges well.

After all the dumplings are ready, put a pot of water on the fire. On top we install a container for steaming. After the water in the pan has boiled, lay out the dumplings and cover them with a high lid. Cook the dumplings for a couple of 10-15 minutes. Put the finished dumplings on a plate, add butter and sprinkle a little with sugar. Serve hot dumplings. Bon Appetit!
