Dumplings with cottage cheese and cherries

This recipe allows you to make a very fluffy and delicious dough. It will only take you an hour to prepare this dish. But as a result, you can enjoy its rich taste.

Ingredients

Cooking process

step 1 out of 8
The flour must be sifted well to get rid of the debris that could be in it. Thanks to this, the dough will turn out to be very fluffy and airy. You can sift the flour into a deep bowl or directly onto a smooth surface such as a table or a wooden board. In the center of the flour slide, make a small funnel and break one chicken egg into it.
step 2 out of 8
The dough must be kneaded by hand. Prepare for the fact that initially it will adhere strongly to them. Start adding kefir to it in small portions. Stir the dough well after each addition. Kefir can go a little more or less than indicated in the recipe. It depends on how much dry flour you use to make the dough. Continue kneading the dough for another 5 minutes. Then shape the dough into a small ball. Transfer it to a deep plate and let stand for 20-25 minutes. This step is required. If you skip it, the dough can be very dry and stick to your hands.
step 3 out of 8
While the dough is resting, we start preparing the filling for future dumplings. First, we need to rinse the cherries. Remove excess moisture from the surface of the berries with paper towels. After that, you need to remove the seeds from each berry. To do this, you can use a regular hairpin.
step 4 out of 8
In a separate bowl, combine the curd with the chicken egg. Add sugar of your choice to the mixture. Now we need to grind the mixture of cottage cheese, eggs and sugar until completely homogeneous. Add seedless berries to it and mix everything again.
step 5 out of 8
When the time is up, remove the dough from the bowl and place it on a smooth surface, which must be sprinkled with flour in advance. We begin to roll out the dough using a rolling pin. As a result, it should become very subtle. We make mugs for future dumplings using a regular glass. You can also use a special mold if you have one in your kitchen. Transfer the finished mugs to a wooden board and cover with cling film so that it does not dry out.
step 6 out of 8
We begin to put the filling in the center of each circle. Make sure that the sugar and cherry juice do not get on the edges of the dough, which we will hold together. Then, during the cooking process, the dumplings may fall apart.
step 7 out of 8
Pour cold water into a saucepan. We transfer it to high fire. When the water boils, add salt to it and stir well. Thanks to the salt, the taste of the dumplings will become richer. Stir the water again before adding the dumplings. After that, start gently lowering them into the water.Stir the dumplings constantly during cooking to prevent them from sticking to each other and sticking to the bottom of the pan. Remove the finished dumplings immediately from the water so that they do not swell and stick.
step 8 out of 8
Put the cooked dumplings in portions on a plate. They should be eaten hot. Serve dumplings with sour cream. You can also add some jam or berries to them. Enjoy this flavorful dish.
