Dumplings with cottage cheese and frozen cherries

If you have cottage cheese in your refrigerator that needs to be used as soon as possible, this recipe will be very useful. You only have to spend an hour of free time. But as a result, you will get a very tasty dish.

Preparing the dough for future dumplings. Sift the flour into a deep bowl. Repeat this step several times. Thanks to this, you can remove various garbage from it. As a result, the dough is very airy. Add half a teaspoon of salt to the dough and stir the dry mixture well. After that, we make a small funnel in the center of the dough and break one chicken egg into it. Pour 4 tablespoons of vegetable oil and mix the dough.

Fill the pot with cold water. We put it on the stove and wait for the water to boil. Gradually add hot water to the dough and stir it well with a spoon. As a result, the dough should be soft and elastic. After that, the dough will have to be kneaded with your hands. Place it on a surface to be floured in advance. Form the dough into a ball and transfer it back to the bowl. Cover it with a regular towel or cling film. Let the dough stand for 40 minutes.

Let's start preparing the filling for the dumplings. Rinse the cherries. Transfer it to a plate. In a separate container, combine cottage cheese, one chicken egg and sugar. Whisk the mixture well. Transfer the cherries to it and stir again.

When the dough is infused, transfer it to a board, on which you pour flour in advance. Roll it out to a thin layer. Use a regular glass to make small circles of the dough. You can also use a special form if you have one in your kitchen. Place the circles on the board. Cover them with a towel to prevent them from drying out.

Put the cottage cheese and cherry filling in the center of each mug. You can add some more sugar to it if you like. The amount of filling can vary depending on your desire. We begin to carefully sculpt the dumplings. Make sure that the sugar and cherry juice do not get on the edges of the dumplings that you will be joining. If this happens, the dumplings may fall apart during cooking. Excess dumplings can be laid out on the board and placed in the freezer until next cooking.

Fill the pot with cold water. We put it on a hot stove. Wait for the water to boil. Then add salt to it. This ingredient is essential. Even if you make dumplings with sweet fillings, salt can still enhance their flavor. She will make it brighter and more saturated. Put the dumplings in the water.Stir them back constantly with the side of a spoon. Thanks to this, they will not stick together. When the water boils again, continue cooking the dumplings for 4 minutes. Transfer the finished dumplings to a colander. Leave them on for a few minutes to drain excess liquid.
