Before making the dough, we sift the flour. So it will be enriched with oxygen, and the result will be soft and airy dough. Add salt to the flour. Stir the dry mixture well. Pour vegetable oil to it and mix everything again. If you are missing one type of flour, you can mix several. For example, wheat and buckwheat flour.

Pour water into a saucepan and transfer to a fire. When the water boils, pour it into a glass. Gradually start adding boiling water to the flour. Stir the dough well with a spoon after each addition. Then start kneading the dough with your hands. If it sticks to your hands a lot, add a little more flour to it. Try not to overdo it with the amount. Form the dough into a circle. Transfer it to a bag or wrap it in cling film. Leave the dough in the refrigerator for 15 minutes.

Let's start preparing the filling. Use dark cherries. Rinse the berries. Lay them out on a towel to absorb excess moisture. Now we need to remove seeds from the berries. Use a special tool or a regular hairpin. In a separate bowl, combine the sugar and cornstarch. The starch will prevent the cherry juice from flowing out of the dumplings.

Remove the dough from the refrigerator. Transfer it to a wooden board. Roll it out and form a long sausage. Cut it into small pieces. Roll out each piece. As a result, you will get small circles. They don't have to be the same size. Don't worry if your mugs don't come out perfectly straight. In the process of sculpting, they will be corrected.

In each resulting circle, put a little mixture of sugar and starch. Place a few cherries on it. If using sour berries, increase the amount of sugar. We begin to sculpt dumplings. Bring the edges together and press firmly with your fingers. Optionally, you can make pigtails along the edges of the dumplings. Watch out for cherry juice on the edges of the dough so that they do not boil during cooking.

To prepare dumplings, fill a saucepan with cold water. We put it on the stove and wait for the water to boil. Add some salt and stir well. It will make the filling taste more intense. You can add some vegetable oil to the water if desired. Stir the water again and quickly dip the dumplings into it. This will prevent them from sinking to the bottom of the pot. Stir the dumplings constantly with the back of a spoon during cooking. This will prevent them from sticking to each other or to the pot.When the water boils again, turn down the heat. Transfer the finished dumplings to a colander so that excess liquid drains from them.
