For dumplings, it is best to use premium wheat flour. It makes a very tender dough. Before adding flour to the dough, it must be sieved. Do this 2 or 3 times. Then you will definitely remove all the debris from it, and the dough as a result will be very fluffy and soft. Add flour in several stages and in small portions. Stir the dough well after each addition. Do this with a spoon or whisk.
For the filling, we need sugar and starch. It is best to use corn. We mix starch and sugar. Starch is used to prevent the filling or juice of the berries from leaking out of the dumplings during the cooking process. The cherries need to be rinsed several times. After that, remove excess moisture from the berries. Remove the bones from them and transfer the berries to a plate.
Transfer the dough back to a smooth surface where you will roll it out. As a result, you should have a thin cake. It is necessary to make small circles from it. Use a regular glass for this. Their diameter should be about 5 centimeters. Place the finished dough circles under plastic wrap so that they do not have time to dry out.
Place the filling in the center of each circle. Put in the sugar and starch mixture first. You can also pre-mix it with the berries. Put the cherries on sugar and starch. Its amount may vary depending on your desire. The amount of sugar can vary depending on how sour cherries you use. Gently blind the edges of the dumplings and press them down with your fingers. Check each dumpling so that it doesn't fall apart during cooking. There should be no holes in the dough.
To prepare dumplings, fill the pan with water. We put it on fire. We are waiting for the ox to boil. Add salt to it and mix well. It will make the filling taste more intense and bright. After that, immediately start putting the dumplings into the water.Then they will not sink to the bottom of the pot. Stir the dumplings constantly to keep them from sticking together. When the water boils, cook them for another 3 minutes. When the dumplings are done, remove the pan from the heat.
