Dumplings with steamed cherries on kefir

Often there are situations when unexpected guests come to you, and there is not enough time to prepare large-scale dishes. However, this recipe can improve your situation. Just an hour of your time, and a juicy lunch that anyone will like is ready.

Pour kefir into a small deep bowl. You can choose its fat content depending on your preferences. Add salt, 1 tablespoon sugar and 1 teaspoon baking soda to it. Stir the mixture well to distribute the baking soda evenly. Try not to overdo it with this ingredient. Otherwise, the taste of soda will be clearly felt in the dough.

We sift the flour several times in advance, removing garbage from it. Thanks to this action, the dough will turn out to be very fluffy. We begin to add it to kefir in small portions. Stir the dough after each addition. Stir it with a spoon first and then use your hands. As a result, the dough should be very soft and elastic. Do not rush to get upset if it sticks to your hands a little, as this is normal. Form the dough into a ball, wrap it in plastic wrap and let stand for 20 minutes.

Let's start preparing the filling. The cherries need to be rinsed well. It is advisable to do this several times. Place the berries on paper towels to absorb excess moisture. After that, we need to remove the seeds from the berries. You can do this with a hairpin or a special kitchen appliance. Transfer the finished cherries to a plate.

Transfer the dough to a floured wooden board. Roll it out to a thin layer. Its thickness should be approximately 2 millimeters. To make circles out of the dough, use a glass or a special mold. The circles should be about 5 centimeters in diameter. Place the circles on a floured board. If you end up with too many circles, cover them with cling film and refrigerate until next time you cook.

First, put a few berries on each circle. Pour sugar on them. The amount can vary depending on how sweet you want the dumplings filling and how sour cherries you use. Each dumpling must be folded in the shape of an envelope and connect their edges with your fingers. Make sure that the cherry juice and sugar do not get on the edges of the dough. If this happens, the dumplings may come unstuck during the cooking process. Each ready-made dumpling must be laid out on a surface sprinkled with flour.

The steamer must be lubricated with oil. You can use both vegetable oil and butter. Place the dumplings at a distance from each other so that they do not have time to stick together during cooking.Cover them with a lid and cook for 20 minutes. When they are ready, immediately remove from the steamer. So they will not have time to fall apart.

Arrange the finished dumplings on plates. You can add sour cream directly to them or serve it on a separate plate. Berries and mint leaves can be used as a decoration for this dish. Serve hot. Dumplings will definitely be able to pleasantly surprise unexpected guests. Set the table!
