Pour water into a small saucepan and put it on fire. When it boils, pour it into a glass. Add half a teaspoon of salt to hot water and stir well. Use premium flour for cooking. We sift it with a sieve. Transfer it to a deep bowl. Set one tablespoon of flour aside. Pour a glass of hot water over the flour. Stir the dough quickly with a spoon. If it gets very hot, let it stand and cool slightly.
While the dough is infused, proceed to the preparation of the filling for the dumplings. Rinse the cherries and transfer them to a deep bowl. Be sure to remove the kernel from each berry. Do not leave them, as you can damage the tooth. Add one third of the sugar to the cherries and stir in the filling. The amount of sugar can vary depending on how sour the berry you use. Mix the rest of the sugar with cornstarch, which will prevent the juice of the berries from flowing out of the dumplings. Drain the cherry juice. Add a mixture of sugar and starch to the berries. Stir the filling again.
Transfer the dough to the table with flour. Roll it out to a thin layer, which should be about 1 millimeter thick. If your dough is soft, it will roll out much easier. However, be careful as it can tear easily. Divide the dough into small triangles. Their size can vary depending on what kind of dumplings you want. From dumplings of this shape, you will not have scraps of dough.
In the middle of the rectangle, we begin to lay out the filling. We begin to sculpt dumplings. The edges of the dough need to be held together very well. Ensures that berry juice does not get on them. Because of this, dumplings can become unstuck during cooking. Stir well before adding the filling, as the starch can settle to the bottom of the container. You can use the remaining cherry juice as a sauce for ready-made dumplings.
Fill the pot with water. Put it on fire and wait for the water to boil. Add salt to it and stir well. After that, start quickly putting the dumplings into the water. If you have any extra dumplings left, put them in the freezer. You can use them next time.Stir the dumplings gently with the back of a spoon or a slotted spoon. When the water boils again, reduce the heat and simmer them for 5 minutes.
