This is a recipe for real dumplings. Its advantage is that you can use ingredients of your choice as a filling. You can also experiment with other ingredients to make the dish more tender and flavorful.

The filling for dumplings should be prepared in advance. Remove the cherries from the refrigerator and let them defrost a little. It is desirable that it is already pitted. This will save a lot of time. In a small bowl, combine the sugar and starch. The amount of sugar depends on how sour cherries you use and how sweet you want the filling. Add starch depending on the amount of sugar. Stir the mixture well. You can add it directly to the cherries or lay out the ingredients separately on the dough.
For the dough, pour kefir into a bowl. Choose its fat content as you wish. Add 1 teaspoon of sugar, half a teaspoon of baking soda and salt to it. Stir the ingredients, spreading the baking soda evenly so that the taste is not quite felt. Sift the flour through a sieve in advance. So it will be enriched with oxygen, and the dough will turn out to be airy. Add flour gradually, stirring constantly with a spoon or whisk.
Place the dough on a floured board. If it continues to stick to your hands, add more flour. However, you cannot overdo it with it, since as a result the dough can turn out to be dry. Hand knead it for a few more minutes. After that, wrap it in foil and put it in the freezer for 15-20 minutes. Be sure to let the dough rest a little. Then it will definitely not turn out solid.
We begin to sculpt dumplings. First, we need to put the filling in the center of each circle. First, add a little of the starch and sugar mixture. The starch will prevent the juice of the berries from flowing out of the dough. Place the cherries on the mixture. Make sure that the sugar does not get on the edges of the dough, which need to be held together. Because of this, during the cooking process, the dumplings can fall apart. Place the finished dumplings on a wooden board.
Pour water into a small saucepan. We transfer it to the stove. When the water boils, add a little salt to it and stir. After that, immediately start spreading the dumplings into the water. Stir them back constantly with the side of the spoon. This will prevent them from sticking to each other or to the bottom of the pan. When the water boils again, reduce the heat. Wait for the dumplings to float to the surface of the water.Then remove the pan from the heat and transfer them to a colander. So excess liquid will drain from the dumplings.
Put the finished dumplings in portions on plates. You can decorate them in advance with jam or sour cream. You can grease the dumplings themselves with melted butter. Use berries or mint leaves as decorations. Serve immediately after cooking to keep the dumplings hot. They will be the perfect end to a holiday or a regular working day. Set the table quickly!
