If, for some reason, there was neither kefir nor sour milk in your refrigerator, you should read this recipe. The process of its preparation is as simple as possible. You will have to spend a little over an hour to enjoy the delicate taste of the aromatic dish.

Before cooking, all necessary food should be allowed to stand for 20 minutes. This is one of the secrets of perfect dumplings. We will start making dumplings with the filling. We need to rinse fresh cherries several times. Remove excess moisture from the surface of the berries with a paper towel. You need to get bones out of the cherries. You can of course leave them. However, this will be dangerous for your teeth. Transfer the cherries to a plate. In a separate bowl, combine 2 tablespoons of sugar and 2 teaspoons of starch. Stir the mixture well. Sprinkle it over the cherries. Stir the filling, spreading the sugar and starch.
Place a saucepan full of water over the skimmer. When the water boils, pour it into a container. Add salt and soda to the boiling water. Mix everything well. Sift the flour through a sieve. So it will be enriched with oxygen. You will remove unnecessary garbage from it. Add flour to boiling water gradually, in small portions. Stir the dough with a spoon after each addition. If it gets very hot, let it cool slightly.
You need to knead the dough with your hands. Transfer it to a wooden board that already has flour on it. Knead the dough for a few minutes. If it sticks to your hands a lot, add more flour to it. However, you cannot overdo it with this ingredient. The dough should be very soft. Form a ball out of it. Wrap it in plastic wrap and refrigerate for 25 minutes. The dough must be left to stand. Thanks to this, it will be very lush.
We begin to form dumplings. Put the cherry and sugar filling in the center of each circle. Connect the edges of each dumpling. Pin them together with your fingers. Be careful not to get sugar on the edges of the dough. Because of this, dumplings can fall apart during the cooking process. Place ready-made dumplings on a wooden board.
Fill the pot with cold water. We transfer it to the stove. We are waiting for the water to boil. Add some salt and stir. After that, immediately lay out the dumplings. Change them with a slotted spoon. This will prevent the dumplings from sticking to the sides of the pan. When the water boils again, reduce the heat and cook them for another 7 minutes. The finished dumplings will float to the surface of the water.The dough will become almost transparent, so you will clearly see the filling of the dumplings.
Place the dumplings on a warm plate. You can decorate the dish with fresh berries and mint leaves. Serve dumplings with sour cream, jam or sweet sauce.
