For dumplings, choose fine wheat flour. It will not be able to make dry and hard dough. Flour must be sifted through a sieve in advance. Do this several times. So it will be enriched with oxygen, and the dough will be very fluffy as a result. Add flour to milk gradually, in small portions. Stir the dough with a regular spoon or whisk after each addition. The dough should be elastic. Cover the bowl with a towel and let the dough sit for 25-30 minutes.
Let's start preparing the filling. For this we will use fresh cherries. It is best to take berries of dark varieties. Be sure to rinse it before cooking. We need to carefully get the seeds out of the berries. You can use a pin to do this, or simply cut the cherry in half. Transfer the berries to a plate. Add sugar to them and stir well. The amount of sugar can vary depending on how sour the berry you use. Add semolina as the last ingredient. It will absorb the juice that the cherries will release. Thanks to this, the dumplings will not stick.
Place the dough on a wooden board, which should be sprinkled with flour in advance. Knead it for a few minutes. Roll out the dough. It should resemble a thin cake. You should make small circles out of it. Use a special shape or a glass with sharp edges for this. Lay out the circles on the board. Cover them with cling film so they don't dry out.
Fill a pot with cold water. For this amount of product, you will need 3 liters of water. Transfer the pot to the stove. When the water boils, add a little salt to it and stir. Place the dumplings in the water. Stir them constantly with a slotted spoon. If you have any "extra" dumplings, put them in a bag and send them to the freezer. That way you can cook them next time. Wait for the water to boil again. Reduce heat and simmer the dumplings for 3 minutes. Then transfer them to a colander. So excess moisture will drain from them.An almost transparent dough will be a sign that the dumplings are ready. You can even see their fillings.
