This recipe is versatile. You will find all the products you need for it in your kitchen. This dish is perfect for a family dinner. Before you know it, the plates are empty and your family asks for more.

First, we need to prepare the filling for our dumplings. It is advisable to use dark cherries. With them, the dumplings are more tender and tasty. Rinse the cherries several times. Transfer it to paper towels to absorb excess moisture. Now the cherries need to be pitted. You can use a regular pin. This process will take you a long time, but you shouldn't leave the seeds in the cherries. After that, transfer the berries to a deep bowl. In a separate container, combine the sugar and potato starch to keep the juice from flowing out. You can use granulated sugar instead of sugar. Add this mixture to the berries and mix the filling well.

We begin to prepare the dough. The flour must be sieved with a sieve. For the dough, you should choose finely ground wheat flour, which should not be dry. Then the dumplings won't fall apart. You can also use a mixture of, for example, wheat and buckwheat flour. However, you need to take these ingredients in the same proportions.

Pour cold water into a separate container and break the egg into it. Stir the mixture well. Add half a teaspoon of salt to it and stir again. Use only cold water, as this dough will definitely not dry out. Start adding flour to the mixture in small portions. Stir the dough well with a spoon or whisk after each addition. Form the dough into a circle with your hands and wrap it in plastic wrap. Transfer the dough to the refrigerator for about 20-25 minutes.

When the time is up, transfer the dough to your work surface. Sprinkle it with flour in advance. Roll out the dough with a rolling pin. As a result, the dough should resemble a thin cake. Make small circles out of it. Use a special shape or a glass with sharp edges for this. Spread each circle on the flour so that it does not stick to the table.

We begin to spread the cherry filling in the center of each circle. The amount may vary depending on your preference. However, you cannot overdo it with the filling, as the dumpling can break during cooking. Pin the edges of the dumplings together and press them down with your fingers.

You can boil dumplings in water or steam. We will use the first option. Fill a pot with water. Place it on the stove. When the water starts to boil, add salt to it. It will enhance the taste of the filling of the dumplings. Stir the water vigorously and add the dumplings immediately. This will prevent them from sinking to the bottom of the pot. Stir them constantly. Then they will not stick to each other.If you don't want to damage the finished dumplings, use a slotted spoon to remove them from the pan.
