Cherry confiture is a delicious and independent dessert for homemade tea. This jam is ideal for toasts and sandwiches in addition to morning tea. This recipe for making confiture using agar-agar and without long-term heat treatment makes a cherry delicacy truly useful!

Cherries must be sorted out, removing damaged berries and leaves. After that, rinse the cherries under running water.

Remove seeds from all berries. Pour the cherry juice that came out during the pitting process into a separate container.

Half of the total amount of cherries must be chopped with a blender. Set a small part of the chopped berries (100 g) aside for now.

Put pitted cherries, chopped berries and granulated sugar in a suitable saucepan. We mix everything. We put the saucepan with the contents on the fire and bring to a boil.

Let's prepare a thickener. Measure the amount of cherry juice you get. If it does not reach 100 ml, then dilute it with water so that you end up with 100 ml of liquid. Pour the resulting liquid into a container with the remaining chopped berries, add agar-agar here. Stir the berry mixture, put on fire, bring to a boil and then boil for a couple of minutes. The berry mass will become thick.

After that, pour the thickener into a container with boiling berries, mix everything thoroughly and keep on fire for another 5 minutes from the moment of boiling.

Pour hot cherry confiture into sterilized jars and close with lids. This jam can be stored both in the refrigerator and at room temperature.
