Cherries make an excellent dessert with a slight sourness, which can be used to season cheesecakes, dumplings or puffs. The amount of berries and sugar does not have to be the same as in the recipe. Each housewife adjusts the portions to her liking.

The first step in the process of making cherries is to process them. Separate rotten berries from whole and undamaged ones. Then they should be rinsed and left in a colander for a while. Only when the berries are dry do we take out the seeds and tear off the stalks.

Pour the cherries into a saucepan and add the required amount of sugar. Pour in the juice that was released from the berries when removing the seeds.

We mix the berries with sugar not with a spoon, but with our hands. Then cover the pan with gauze. We leave the cherries in the refrigerator overnight so that the berries let the juice start. If the cherry is very ripe, the juice will come out in 2 hours.

We need 4 cans for blanks. They need to be prepared in advance. We spread the contents of the pan in a container. Pour in the juice. We sterilize the cherries in a saucepan, the bottom of which is covered with a towel: cover the jars with lids, pour water into the pan up to the "shoulders" of the container. First, bring the water to a boil, and then sterilize the dessert for 15 minutes.
