Cherry jam with starch

Starch is an excellent thickener for such sweet treats, while it does not add any extra flavors to the dish and remains invisible, preserving the aroma and flavor of the berries. This jam can be used for baking pies or pies, or as a separate dessert for a cup of aromatic tea. Jam is quick and easy to prepare.

Sort the cherries out of debris, branches and leaves in advance, wash the berries and remove the seeds.

Use a blender to grind the cherries into a smooth paste. Transfer it to a thick-bottomed bowl and boil.

Add sugar, lemon juice and lemon zest. Reduce heat, add starch to the jam and cook, stirring for another 10 minutes, until all loose ingredients are dissolved. Remove foam from the surface.

Prepare sterile jars if you are rolling it up for the winter, or a bowl for jam if you plan to immediately feast on dessert and transfer it to the dishes while still hot. The jam will thicken when it cools completely, but for now it should drip from the spoon in a trickle, not in drops.
