Cherry Jam with Pectin

Jam from ripe and juicy cherries, prepared at home, will preserve the beneficial and nutritious properties of berries. Adding pectin will significantly reduce the amount of sugar while making the jam thick. The treat will have a transparent dense structure with pieces of whole berries.

Combine pectin with 3 tbsp. l. sugar and set aside. Go through the cherries from debris, branches and leaves, wash the berries and remove the seeds, it is convenient to do this with a regular pin or hairpin.

Cover the berries with sugar, stir and leave for 3 hours in a dark place to let the cherry juice.

Put the berries on low heat until boiling and cook for 5 minutes, constantly watching over the boiling liquid and removing the foam. Add pectin, stir immediately and remove from heat after 3 minutes.
