I want to share a wonderful recipe for volvushki cooked with a cold ambassador for the winter. The mushrooms are crispy and delicious. Appetizing waves will decorate any festive table. The appetizer goes well with any hot dishes, especially with potato side dishes.

Put the washed mushrooms in a deep saucepan and cover with cold water. Put on medium heat and bring to a boil, then reduce heat and cook mushrooms for 20-25 minutes, stirring occasionally and skimming off the resulting foam. After the time has elapsed, drain the waves through a colander or sieve and rinse the mushrooms under running water and leave the excess liquid to glass.
Alternating waves of salt, fill the jars completely. Roll up the cans with sterile lids using a seamer. Move the jars with the waves prepared with cold salting to a cool, dark place for storage. Before serving, rinse with cold water to remove salt residues and serve, season with unrefined sunflower oil and add onions, cut into half rings.
