Sun-dried cherry tomatoes are a versatile and delicious appetizer that will perfectly complement a meat or fish dish.

We wash the tomatoes thoroughly, removing the twigs.

Next, cut the tomatoes in half and remove the pulp with a spoon.

We wash the basil under running water, dry it and cut it into small pieces. We send it to a container with tomatoes. Peel the garlic, press it with a knife and also put it with the rest of the ingredients. Then season the cherry with rosemary, ground pepper and salt. Finally, add the bay leaf and olive oil. We mix everything. Leave the cherry to marinate for 2 hours.

Put the pickled tomatoes on a baking sheet, previously covered with parchment. We spread the cherry along with the spices. We place the tomatoes in an oven preheated to 100 degrees for 3.5 hours.
