Sun-dried green tomatoes

Sun-dried tomatoes are a common Italian snack with an indescribable taste and aroma. Red sun-dried tomatoes can be found in almost any supermarket, but green sun-dried tomatoes are less common. Today I propose to cook sun-dried green tomatoes on your own.

Select green tomatoes that are strong and of approximately the same size (small or medium-sized fruits are best). Rinse green tomatoes and hot peppers thoroughly under running water and then leave to dry. Peel the garlic. Cut hot peppers in half, peel from seeds and core.

Cut the green tomatoes in half. Place on a baking sheet lined with baking paper, season with salt, add black pepper, dried thyme, dried basil and dried rosemary and drizzle with a little olive oil on top.

Place the baking sheet in the oven. Set the temperature to 100 degrees, dry for about 4-6 hours with the door ajar.

Flip occasionally to cook evenly green tomatoes. Wash the jars thoroughly and sterilize in the microwave or oven.

Place the cooled sun-dried green tomatoes in sterile jars, sprinkle the layers with chopped garlic and hot pepper. Pour olive oil over the jars of sun-dried tomatoes. Seal the jars with sterile lids. Then put it in the refrigerator, after about 2 weeks you can taste the green sun-dried tomatoes.
