For the preparation of amber apple jam "White filling", when the slices are transparent, whole and beautiful, you need to know some features of the technology. For jam, strong and not overripe apples of this variety are taken. Cook the jam 3 times with breaks for cooling and infusion for at least 6, and preferably 10 hours. Slices of "White filling" can be pre-soaked for 15-30 minutes in a solution of soda, then they better preserve their integrity.

For amber jam, choose strong, undamaged apples. Rinse them well, then remove the seed pods and cut the fruit into slices at least 5 mm thick. You can soak the apples in a baking soda solution, but this is not necessary.

Put the sliced ​​apples in layers into a jam pot, sprinkle each layer with sugar.

The top layer should be sugar. Cover the saucepan with a lid or napkin and leave for 8 hours, or overnight, so that the apples give their juice during this time.

After this time, cook the jam over low heat for 20 minutes from the start of the boil. At the beginning of cooking, stir the apples with a spoon, as undissolved sugar may remain at the bottom of the pan. Then turn off the heat and leave the jam to infuse for 6-10 hours. Repeat cooking with a long infusion time 2 more times. As a result, the apple slices will become transparent and golden, like amber.
