Prepare all the ingredients for minced meat hedgehogs with rice and potatoes. Wash the potatoes thoroughly and then peel them with a vegetable peeler. Peel the onions and garlic, rinse under cold water, and then chop with a sharp knife.

Rinse the rice under cold water, place in a saucepan and cover with water. Place on medium heat. Bring to a boil, season with salt, reduce heat and simmer for 10 minutes, then drain in a colander and rinse with cold water.
