Minced hedgehogs with rice and tomato sauce in a pan

I want to share a simple and quick recipe for minced hedgehogs with rice and tomato gravy, cooked in a pan. The dish turns out to be hearty and juicy, and does not require an additional side dish. As a supplement, you can serve fresh vegetables of your choice.

Rinse the rice well in running water, place in a saucepan and cover with cold water. Put on fire. Bring to a boil, season with salt, reduce heat and simmer for 10 minutes, then drain in a colander and rinse with cold water. Put the minced meat in a deep container, then add the boiled rice, chicken egg, salt, paprika and black pepper to taste. Mix thoroughly.

Peel the onions, rinse under cold water and chop with a sharp knife. Wash the carrots thoroughly under water, peel them using a vegetable peeler. Grate the peeled carrots on a coarse grater.

Heat a deep skillet well over medium heat. Pour in the required amount of vegetable oil and fry the vegetables until soft. Combine tomato paste with 200 ml of drinking water and mix well. Then pour the resulting tomato sauce into the pan with vegetables, salt and pepper. Simmer for 10 minutes, stirring occasionally.

Take a second skillet, pour half of the gravy and spread evenly over the bottom. Roll hedgehogs of the same size out of the cooked minced meat, wetting your hands in cold water. Place on the gravy at a short distance from each other.

Spread the other half of the gravy evenly over the top. Cover, place on low heat and cook for about 30-35 minutes.
