Minced hedgehogs with rice and tomato gravy, cooked in the oven - a great option for a family dinner. The dish does not require any special skills; any hostess can handle it. The cooking process is simple, but a little time consuming. If you have pre-cooked rice, this will significantly shorten the cooking time for hedgehogs.

Rinse the rice, place in a saucepan and cover with cold water. Put on fire. Bring to a boil, season with salt, reduce heat and simmer for 10 minutes, then drain in a colander and rinse with cold water. Peel and chop the onions. Peel the carrots and grate them on a fine grater. Preheat the pan well. Pour in vegetable oil and fry the vegetables until soft.

Put the tomato paste in a bowl, add 250 ml of drinking water and mix thoroughly. Then pour the resulting tomato sauce into the pan with the vegetables and stir well.

Add wheat flour to the remaining drinking water and mix thoroughly, then pour in a thin stream into the gravy.

Season with salt and pepper, add your favorite greens to taste. I had dried dill. Stir well and bring to a boil, then immediately remove from heat. Peel the garlic, rinse in cold water, and then chop with a knife or pass through a press and add to the gravy.
