Minced hedgehogs with rice and tomato sauce in a saucepan

Hedgehogs are a common, hearty dish that can be cooked in the oven, in a skillet, or in a casserole dish. This dish is a great option to quickly and tasty feed a large family. Due to the rice used in cooking, the dish does not require an additional side dish.

Rinse the rice thoroughly under cold running water, put it in a saucepan and cover with cold water. Put on moderate heat. Bring to a boil, season with salt, reduce heat and simmer for 10 minutes, then discard in a colander or sieve and rinse with cold water.

Prepare the minced meat. Wash a piece of pork thoroughly under cold water, then pat dry with paper towels, cut into medium pieces and mince.

Peel the onions, rinse under cold water and chop with a sharp knife. Preheat a deep skillet with a thick bottom. Add a small amount of vegetable oil and fry the chopped onions until soft.

Wash the carrots thoroughly under running water, and then peel them with a vegetable peeler. Grate the peeled carrots on a fine grater. Then put in a skillet with onions and fry for another 5 minutes, stirring occasionally.

Peel the garlic, rinse under cold water and pass through a press, put in a deep container. Then add the cooked minced meat to the garlic, add boiled rice, fried vegetables, a chicken egg, salt, dry seasonings and black pepper to taste.

Roll out the cooked minced meat into equal sized hedgehogs, wetting your hands in cold water, and place in a deep saucepan with a thick bottom. Pour in some cold water, a little salt, cover and put on low heat, cook for about 20 minutes.

Make a tomato gravy. Peel the garlic, rinse under cold water and pass through a press. Combine tomato paste, sour cream, and minced garlic in a small bowl. Add salt and wheat flour and mix thoroughly.

Pour in the required amount of warm drinking water and mix thoroughly with a whisk until smooth.

Rinse parsley or any other greens thoroughly under running water, shake off excess moisture and chop with a sharp knife. Cool the prepared minced hedgehogs with rice and tomato sauce, put on a serving dish, garnish with chopped parsley and serve.
