With great pleasure I want to share a wonderful recipe for minced hedgehogs with rice in tomato sauce, cooked in the oven. My grandmother taught me this recipe. I often cook hedgehogs, and to shorten the cooking time, I form a large number of hedgehogs and freeze them, then use them as needed. It is very convenient.

First, rinse the rice under running water, then put it in a saucepan and cover with cold water. Put on fire. Bring to a boil, season with salt, reduce heat and simmer for 10-15 minutes, then drain in a colander and rinse with cold water. Please note that the recipe indicates the amount of boiled rice.

Wash the carrots thoroughly, peel them with a vegetable peeler, and grate them on a coarse grater.

Peel the onions, rinse under running water, cut into small cubes.

Heat the skillet well over moderate heat. Pour in the required amount of vegetable oil.

Fry vegetables until soft, stirring occasionally. Then remove from heat and cool. Divide in half.

Put the minced meat in a deep bowl, then add the boiled rice, butter, half the fried vegetables, a chicken egg, salt and black pepper to taste.

Roll hedgehogs of the same size from the cooked minced meat, wetting your hands well in cold water. Grease a baking dish or baking sheet with a little vegetable oil, and then lay out the prepared hedgehogs. Place the baking sheet in an oven preheated to 180 degrees. Bake the hedgehogs for about 20-25 minutes.

Prepare the sauce. Add the required amount of tomato paste and drinking water to a pan with half the fried vegetables, mix thoroughly. Season with salt and pepper. Stir well, put on medium heat and bring to a boil, then immediately remove from heat.

Carefully remove the form or baking sheet with hedgehogs from the oven.

Pour the prepared sauce, spreading it evenly over the entire baking sheet. Add bay leaves. Place in the oven again and cook for another 25-30 minutes.
