Minced hedgehogs with rice in tomato sauce in a saucepan

I want to share a dietary recipe for incredibly tender minced hedgehogs with rice in tomato sauce, cooked in a saucepan. I consider the recipe to be dietary, since hedgehogs do not require preliminary frying. If you want to make your hedgehogs less nutritious, use lean mince.

Ingredients

Cooking process

step 1 out of 7
Rinse the rice, cover with cold water. Season with salt, reduce heat and simmer for 10 minutes after boiling, then drain in a colander and rinse with cold water. Peel and chop the onions. Peel the carrots and grate them on a fine grater. Put the minced meat in a deep container, add boiled rice and chopped vegetables.
step 2 out of 7
Then add salt and black pepper to taste. Mix thoroughly until smooth.
step 3 out of 7
Prepare a heavy-bottomed saucepan. I didn't have pots with a thick bottom, so I covered the bottom with white cabbage leaves so that the hedgehogs would not burn.
step 4 out of 7
Form the cooked minced meat into equal sized hedgehogs by wetting your hands in cold water. And place them neatly in a saucepan. If you get a lot of hedgehogs. Shuffle the rows with cabbage leaves or grated carrots. But this is not a mandatory procedure.
step 5 out of 7
Wash the carrots well under water, peel them with a vegetable peeler, and then grate on a coarse grater. Put the grated carrots on top of the hedgehogs.
step 6 out of 7
Put the tomato paste in a bowl, add the required amount of drinking water, salt and pepper, and mix thoroughly. Then pour the resulting tomato sauce into the saucepan, spreading it evenly. Cover, place over medium heat and bring to a boil. Then reduce heat and simmer for about 30 minutes.
step 7 out of 7
Ready minced hedgehogs with rice in tomato sauce, gently remove from heat so as not to burn your hands. Cool slightly and serve in portions.

Bon Appetit!
