Minced hedgehogs with rice in tomato paste and sour cream, cooked in a pan, are great for lunch or dinner. The dish turns out to be balanced, aromatic and incredibly tasty. To save time on cooking, make sure you have boiled rice and ready-made minced meat in advance.

Rinse the rice, place in a saucepan and cover with cold water. Put on fire. Bring to a boil, season with salt, reduce heat and simmer for 10 minutes, then drain in a colander and rinse with cold water. Put the minced meat in a deep container, add the boiled rice and break the chicken egg.

Peel the onions, rinse under water, cut in half and chop on a fine grater. Send to the minced meat container, add salt, ground paprika, minced meat seasoning and black pepper to taste. Mix thoroughly.

Roll hedgehogs of the same size out of the cooked minced meat, wetting your hands in cold water. Then roll them in wheat flour.

Heat a deep frying pan well over moderate heat, pour in a small amount of vegetable oil, reduce heat, lay out the formed hedgehogs, and fry them on all sides until golden brown. Then place them on a plate.
