Hedgehogs, like most dishes, have a wide variety of options, and each housewife prepares them according to her favorite recipe. I want to share a simple, in my opinion, recipe for minced hedgehogs with rice in tomato paste and sour cream, cooked in the oven.

Rinse the rice thoroughly under cold running water, place in a saucepan and cover with cold water. Put on moderate heat. Bring to a boil, season with salt, reduce heat and simmer for 10 minutes, then discard in a colander or sieve and rinse with cold water.

Place the bun in a small bowl and cover with milk.

Put the minced meat in a deep container, squeeze the bun and put it with the minced meat. Mix thoroughly.

Then lay out the boiled rice, salt and add black pepper to taste. Stir well until smooth.

Prepare the gravy. Put the tomato paste in a deep bowl, add 250 ml of drinking water and mix thoroughly. Then add the required amount of sour cream, salt and pepper, bring to a uniform consistency.

Roll hedgehogs of the same size out of the cooked minced meat, wetting your hands in cold water.

Grease a baking dish with a little vegetable oil, and then lay out the prepared hedgehogs.

Pour the prepared gravy over the hedgehog form, spreading it evenly over the entire form. And then place it in an oven preheated to 180 degrees. Bake the hedgehogs for about 35-40 minutes.

Prepared minced hedgehogs with rice in tomato paste with sour cream, carefully, so as not to burn your hands, remove from the oven. Cool slightly and serve in portions with your favorite side dish, sprinkle with chopped fresh herbs if desired. Hedgehogs go well with mashed potatoes.
