Blanks of green tomatoes for the winter gourmet

Green tomatoes are usually not eaten fresh, but they can be used to make delicious winter preserves. They are salted, pickled, salads and assorted are made.

Wash the tomatoes, cut the stalks.

Wash greens and chop finely. Peel the garlic. Wash the peppers and carrots, peel the peppers from seeds and partitions. Peel and cut the carrots into several pieces. Grind the bell peppers, garlic and carrots in a blender. Toss vegetables and chopped herbs. Put a few tablespoons of the vegetable mixture in dry sterilized jars, then a few green tomatoes, then again the vegetable mixture, and so alternate to the top. Leave the filled jars for 30 minutes.

Pour vinegar into each jar and pour boiling water over them. Put a towel or stand at the bottom of a deep large saucepan, put jars of tomatoes in it and fill them with water. Sterilize the jars 10-15 minutes after boiling.

Roll up the jars with metal lids, turn them upside down and leave to cool at room temperature. After that, you can move the seaming to a cool place for storage.
