No matter how you store salted bacon, even in the freezer, prepared in cans and in brine, it always turns out to be more juicy and tasty. Using this recipe, you can prepare a large amount of bacon for the winter. Jars of lard in brine are rolled up with metal lids and stored in a cool, dark place for several months.

Cook the brine in a large saucepan using clean water and salt calculated for the amount of lard. Put bay leaves, black and red peppers in the boiled brine, cook for 3 minutes and turn off the heat. Then cool the brine to room temperature. Cut the lard prepared for salting into pieces so that it can be conveniently placed in jars.

Place some peeled garlic in the bottom of clean jars. Then put the bacon in the jars and put the rest of the garlic on top.

Pour lard in jars with chilled brine. Transfer the pepper and bay leaves from the brine to the jars. Then close the jars with nylon lids and leave for 2 days at home temperature. After this time, the bacon, given the salt concentration in the brine, is already well salted and can be eaten.

Then roll up the cans of lard with clean metal lids and transfer them to a cold and dark place for long-term storage.

After opening the rolled-up jar, you can cut a piece of bacon into thin slices and serve, and wrap the rest of the bacon from the jar in foil and place in the freezer.
