Many housewives harvest beets for the winter in the same way as other vegetables. This preparation greatly simplifies the preparation of dishes such as borscht or vinaigrette. Also, many salads or preparations for the winter can be prepared from beets. Today I want to propose to prepare a fragrant beetroot snack for the winter.

First of all, take the required amount of beets and wash them thoroughly. Put the prepared beets in a large saucepan, and cover with water so that it completely covers the vegetables, put on medium heat and bring to a boil, then reduce the heat and cook the beets for about 40-50 minutes.

Cool the boiled beets completely, and then peel them. Cut the peeled beets into small pieces. The cutting method is not critical, choose the one that is convenient for you.

Prepare the jars, wash them thoroughly, and then sterilize them in a water bath or oven. You can also use the microwave. Put the chopped beets in sterile jars, and then fill with pre-prepared boiling water and leave for about 10 minutes.

Then drain the water into a saucepan and add salt, granulated sugar, peppercorns, cloves and bay leaves. Place the saucepan with the contents over medium heat and bring to a boil. Then pour in the required amount of vinegar and cook the marinade for about 2 minutes, then immediately remove from heat.

Pour the prepared marinade into the jars of beets, and then screw them tightly with the lids. Gently turn hot jars upside down and wrap them in a warm blanket. Leave in this position to cool completely for about 12 hours, then turn the cooled snack jars and put them in a cool, dark place for long-term storage.
