Jellied pie with apricot on kefir

Kefir pies, as a rule, are always prepared quickly, unpretentiously and turn out ruddy, porous and juicy. This recipe is no exception. Take apricots as a filling for this jellied pie: place them between two layers of batter. The baked goods bake well and give a soft, crumbly crumb that goes well with moist aromatic apricots.

To prepare the dough, break the eggs into a bowl, add granulated sugar, salt, vanillin.

Beat everything together with a whisk or mixer until smooth and light foam is obtained.

Next, pour melted butter and kefir into the egg mass, mix.

We introduce soda, mix thoroughly so that it is evenly distributed over the dough.

The mass will begin to foam slightly - this is the reaction of soda with kefir. Let the mass stand for five minutes.

You may need a little more flour or less flour than indicated in the recipe. We focus on obtaining a homogeneous dough with such a consistency as thick sour cream.
