Jellied Blueberry Sour Cream Pie

Using this method, you can make a pie with any berries, but with blueberries it turns out to be especially bright and colorful. The basis of the pie is crumbly puff pastry. Blueberries can be either fresh or frozen. The main feature of the product is a delicate sour cream filling, which, in combination with juicy aromatic berries, gives the pie the same characteristic creamy-refreshing taste.

To prepare shortcrust pastry, sift flour into a wide bowl, add salt and granulated sugar, mix. Rub the cold butter on a coarse grater and put it in flour. Rub flour and butter with our hands until crumbs are obtained. Then add the yolk and sour cream to the resulting crumb. Mix with your hands and get a rather dense, but pliable, non-sticky dough. We form a ball from the dough, wrap it with cling film and place it in the refrigerator for thirty to forty minutes.

Grease the baking dish with a small amount of vegetable oil or cover it with oiled parchment. The silicone mold does not need to be lubricated at all. We put the shortbread dough into a mold and distribute it with our hands over its entire area, not forgetting to form even sides. Use a fork to prick the dough so that it does not swell when baking.

Cover the dough with parchment, and pour any cereals upstairs: rice, buckwheat, peas, lentils, etc. It is important to place a small weight on the dough so that it does not deform during baking. Preheat the oven to a temperature of 190 degrees. We put the form with the dough on the middle level of an already hot oven and bake for ten to fifteen minutes. Then we take out the form, remove the parchment with the load and continue to bake the sand base for another ten to fifteen minutes, until it is slightly browned.

Preparing the sour cream filling. To do this, in a separate bowl, mix eggs, granulated sugar, vanilla sugar, sour cream and corn starch in the specified amount. Mix everything together with a blender or mixer until completely homogeneous. Fill the blueberries on the dough with the resulting mixture. We send it to the oven and bake the cake until cooked at 180 degrees for twenty minutes.
