Jellied Pie with Cottage Cheese and Blueberries

A recipe for those who love curd baked goods. Moreover, we will add cottage cheese not to the filling, but to the dough. Due to such a delicate curd base, the pie turns out to be quite light, soft, with a crispy crust. Blueberries on such a "substrate" reveal all their juiciness. The pie is good both warm and cold. Additionally, you can serve a scoop of ice cream to set off the sourness of the blueberries and complement the tenderness of the dough.

Ingredients

Cooking process

step 1 out of 7
To prepare the curd dough, put the softened butter in a bowl, add cottage cheese, granulated sugar, vanilla sugar and a pinch of salt to it. Rub everything with a spoon or punch it with an immersion blender, especially if the curd is grainy. Beat eggs in a separate container. We put a couple of tablespoons of the egg mass in a separate dish - later it will be needed to grease the surface of the cake. Add the rest of the eggs to the curd mass, mix.
step 2 out of 7
Sift the flour together with a baking powder and add it to the resulting curd mass. Quickly knead a soft, tender dough. We roll it into a ball, wrap it with cling film and put it in the refrigerator for thirty to forty minutes.
step 3 out of 7
We grease the baking dish with vegetable oil or cover it with oiled parchment - this will then simplify the process of extracting the finished cake. Roll out the dough into a layer on a floured work surface and place it in a mold. We leave part of the dough for decoration. Distribute the dough evenly in shape, make the sides.
step 4 out of 7
We prepare blueberries: we sort out, rinse them in cool water, dry well on a towel from residual moisture. If the berries have been frozen, then you can first defrost them halfway and drain the excess juice. Pour the berries into a bowl, add sugar and cornstarch to them, mix. We spread the resulting filling on the dough in the form, level it.
step 5 out of 7
Roll out a long layer from the left dough, cut it into three strips. Weave a pigtail from strips.
step 6 out of 7
We put the pigtail around the circumference of the pie. Lubricate it with the left egg mass using a silicone brush.
step 7 out of 7
Preheat the oven to a temperature of 190 degrees. We put the cake pan on the middle level of an already hot oven and bake for about thirty to thirty-five minutes. The braid around the edges of the cake should brown nicely. We take the finished pie out of the oven and let it cool slightly before serving.
Bon Appetit!
