Eggs are usually a part of zucchini casseroles - they create the desired density and structure. But it is possible to do well without them. By adding cashew nuts to the casserole, you can achieve the very density characteristic of casseroles, and also get a mild, delicate taste and tangible satiety as a bonus. Such a dish can be afforded by those who, for some reason, do not want to eat eggs. All the details of cooking - step by step in our recipe.

Pre-soak cashew nuts in water at room temperature for several hours. Then we drain the water, and place the nuts in the blender bowl. Put the washed parsley, salt (1 tsp), lemon juice, black pepper, coriander and turmeric to the nuts. Grind all the components with a blender until a homogeneous mass is obtained.
Preheat the oven to a temperature of 180 degrees and put the casserole dish into it on a medium level. We bake for twenty to thirty minutes, until a golden brown crust forms on the surface. Remove the prepared casserole from the oven, let it stand for a few minutes before serving. Serve on the table directly in the form, in it and cut into portions.
