Zucchini casserole dietary PP recipe

The recipe for pp casseroles is very simple and includes a minimum of products: it consists of zucchini, milk and eggs. Optionally, the recipe can be diversified with your favorite vegetables: the casserole goes well with tomatoes and bell peppers. Another plus of casseroles is that it turns out to be equally tasty with both young zucchini and large zucchini. So let's get started!

We wash the zucchini, cut off the stalk and clean the zucchini from the rind and core. If the zucchini is young, there is no need to peel and seed them. Cut the zucchini into large cubes, approximately 2x2 cm.

Grease the baking dish with olive oil. We spread zucchini in it, salt, pepper and sprinkle with Provencal herbs.

We put the zucchini to bake in an oven preheated to 180 degrees for 15-20 minutes. During this time, the zucchini will brown a little and become soft.

Break the eggs into a small bowl, add a little salt and beat them with a whisk until a light foam forms. Then add milk to the eggs and beat well again with a whisk.

We take the baked zucchini out of the oven, let them cool slightly and add the egg-milk mixture to the dish with vegetables. We again send the form to the oven and bake our casserole at 180 degrees for 20-25 minutes.
