Vegetable casserole with minced meat is a delicious and satisfying lunch. Light baked vegetables in sour cream and egg filling, layered with tender minced meat and sprinkled with cheese. Mmm ... it turns out tender and appetizing.

We roll the minced meat twice through a meat grinder so that we get a delicate airy mass. Put the minced meat in a preheated pan with vegetable oil, add salt, pepper and fry over low heat.

Peel the onions, rinse and add to the minced meat in the pan, stir and continue to fry the minced meat.

Add tomato paste to the pan, mix again and fry the minced meat until tender.

We wash the zucchini, remove the stalk, clean it from the skin and seeds. If the zucchini is young with soft skin, it is not necessary to peel and seed it. We rub the zucchini on a coarse grater, add a little salt and leave for 5-10 minutes. After the juice comes out of the zucchini, squeeze it out. Put half of the grated zucchini on the bottom of a form greased with vegetable oil.

With the next layer on the zucchini, lay out the minced meat fried until cooked, distribute it evenly around the perimeter of the entire form.

Put the remaining grated zucchini on top and level it with a spoon.

Rinse the tomatoes and cut them into slices 2-3 mm wide. If you do not like the skin on tomatoes, you can place the tomatoes in a deep container, pour boiling water over it, let it stand for 2-3 minutes, then rinse with cold water and remove the skin.

Break the eggs into a bowl, beat them with a whisk until a light foam forms, add sour cream, mix well and pour over our casserole with the sour cream-egg mixture.

Rub the cheese on a fine grater (you can use both hard and processed cheese) and sprinkle the casserole on top. We put the casserole to bake in an oven preheated to 200 degrees for 25-30 minutes.
