Delicate zucchini casserole ideal for a light breakfast. The dish is delicious both hot and cold.

Rinse the rice in a colander, transfer to a saucepan and after boiling, cook for 10 minutes, stirring occasionally. Wash the zucchini and rub coarsely on a grater. If the zucchini is very juicy, squeeze it out a little.
