It doesn't take much to cook a fragrant borscht in winter without running out to the store. Just prepare the beetroot dressing ahead of time in the fall, and on occasion, cook the meat broth, add the dressing, spices and, if desired, put the chopped potatoes. Borscht is ready without hassle!

Wash the tomatoes, chop finely.

Mix vegetables, except beets in a deep thick-walled saucepan, simmer for 10 minutes. Then add beets, pour in vinegar, add salt and sugar, mix everything thoroughly. Simmer for 40 minutes. Spread the mixture on sterilized jars, roll up the lids, turn upside down and wrap with a woolen blanket. Allow to cool to room temperature and store in a cool dark place.
