I really love to cook and spend a lot of time in the kitchen. But in order to simplify the preparation of my favorite dishes, I prepare all kinds of semi-finished products that significantly reduce the cooking time. Today I want to recommend you a recipe for frying carrots and onions for the winter.

First of all, peel the onions from the husks, and then rinse them in cold running water. Cut the peeled onions into small cubes.

Put a deep frying pan over medium heat and heat well, add a small amount of vegetable oil, and then put onions, fry until golden brown, stirring occasionally.

Wash the carrots thoroughly in running water, use a vegetable brush if necessary, and then peel with a knife or use a vegetable peeler. Grate the peeled carrots on a coarse grater.

Add chopped carrots to the fried onions and cook for another 5-7 minutes, stirring occasionally.

Rinse the parsley root and then peel it using a coarse grater.

Rinse the bell pepper well and dry, and then cut it into small strips, having previously cleaned it from the seeds and core.

Put prepared vegetables in a pan with carrots and onions, mix well and cook over low heat for another 5-7 minutes.

In the meantime, wash the tomatoes thoroughly, dry them, and then cut them into small cubes, after removing the stalk.

Add chopped tomatoes to frying and mix well.

Then cover the vegetable mass with a lid and simmer over low heat for about 15-20 minutes.

In the meantime, rinse the jars thoroughly in warm water and then sterilize them in the microwave, water bath, or oven. Spread the hot roast in sterile jars.

Tighten well with sterile lids, after pouring boiling water over them or boiling in a saucepan. Turn the fried jars upside down, wrap them in a warm blanket and leave in this position until they cool completely.

Then, turn the jars over and move them to a cool, dark place for storage. You can also store fried jars in the refrigerator.
