Instant Korean Green Tomatoes

Korean-style green tomatoes are a spicy, aromatic appetizer that will not leave anyone indifferent. Such a snack can be folded into a jar, tightly closed with a lid and used as needed within a couple of months. Any meat dish gets a brighter taste in combination with such spicy green tomatoes.

Peel the carrots, rinse and dry. We grate it on a carrot grater in Korean. Put in a bowl and sprinkle with half of the specified amount of salt and granulated sugar. We press the carrots with our hands to soften it a little and cause the juice to appear.

We wash the green tomatoes, dry them and cut them into thin slices. Along the way, we cut out the traces of the stalks with the tip of a knife. Peel the garlic and pass it through a press.

Put the tomatoes in a bowl with the carrots, add chopped garlic, the rest of the salt and granulated sugar. Also add ground coriander.

To prepare the dressing, pour the indicated amount of vegetable oil into a saucepan or a small frying pan and heat until hot. While the oil is heating, peel and finely chop the onions. Pour the onion into the oil and fry until light golden. Pour whole coriander seeds on the onion, chili pepper cut into thin rings along with the seeds. Fry the resulting mixture for a minute or two, until the pepper begins to brown slightly.

Pour the hot mixture along with the oil directly from the pan onto the tomatoes and carrots. Add vinegar, finely chopped parsley. Mix everything together using two forks.

Put a plate or lid of a smaller diameter in a bowl for an appetizer and put oppression on top. We put the snack in the refrigerator. After twelve hours, the snack can already be served on the table.

If you do not plan to consume all of the cooked green tomatoes at once, you can put them in a clean jar and close them with a clean, dry lid. The appetizer is perfectly preserved for two months without losing its taste.
