Armenian green tomatoes without sterilization for the winter

Tomatoes are cut in half and stuffed with greens, pepper and garlic filling. Everything is laid out in jars and poured with a marinade of water, salt, sugar and vinegar. Vegetables are tightly closed with lids and left to cool completely. The result is a delicious and savory dish.

Ingredients

Cooking process

step 1 out of 10
Peel the garlic, pass through a press, finely chop or rub on a coarse grater.
step 2 out of 10
We wash hot peppers well under running water, dry them on a paper towel and cut them in half. Remove the seeds (they can be left if we want to make the tomatoes spicier) and cut into small cubes.
step 3 out of 10
We wash the parsley with dill under cool water, let it dry on a paper towel and chop it finely.
step 4 out of 10
Take a deep bowl and add chopped herbs, pepper and garlic to it. Mix everything well and set it aside for now.
step 5 out of 10
Preparing the tomatoes. First, rinse them thoroughly under running water and dry them on a towel. Now we cut them in half, but not completely.
step 6 out of 10
Stuff them with a mixture of garlic, pepper and herbs using a teaspoon.
step 7 out of 10
We wash glass jars well with hot water and soda, after which we sterilize them in any convenient way.
step 8 out of 10
Put horseradish leaves on the bottom of the cans and put stuffed tomatoes on top. Fill them with boiling water to the brim, cover with lids and let stand in this way for about 10 minutes.
step 9 out of 10
After this time, we put on a special lid with holes on the cans and drain all the liquid into a separate pan. We put on fire, add salt, granulated sugar, mix well, bring to a boil and cook for 3-4 minutes. Now pour in the vinegar, cook for a couple of minutes and remove from the stove.
step 10 out of 10
Fill the tomatoes with the resulting marinade and tighten them tightly with sterile lids. Turn it upside down, wrap it in a towel or blanket and leave it overnight until it cools completely. We send ready-made tomatoes for storage in a cellar or refrigerator. We open in winter and serve as an appetizer for the main course. Bon Appetit!
