Fried zucchini with tomato cubes

A simple but delicious vegetable side dish can be made with courgettes and tomatoes. It can be made spicy or sweeter to your liking, depending on the spices that will be used. In addition, this vegetable stew is delicious when cold, and for a quick snack, place the stew on a slice of toasted bread.

Wash the zucchini, remove the peel with a vegetable peeler and cut them into cubes.

Peel the onions and cut them into thin half rings or quarters.

Preheat a frying pan, pour in some sunflower oil. Send zucchini and onions to a skillet, fry over moderate heat, stirring occasionally.

Wash the carrots, peel and grate them.

When the moisture has evaporated from the zucchini, add the grated carrots to the pan, stir and fry over medium heat.

Wash the tomato, make a cross-to-cross cut on it, dip the tomato in boiling water for a couple of minutes, then, starting from the cut, remove the peel. Grind the tomato pulp in a blender.

Add the tomato mixture to the vegetables in a skillet, stir and continue cooking over medium heat.

Peel the garlic cloves and chop finely. When the dish is almost ready, add garlic to it, salt and season to taste. Sprinkle the finished dish with chopped herbs and serve.
