For frying, young zucchini with a thin skin are better suited, but if you wish, you can trim the skin of overgrown vegetables, remove the seeds and core and cook.

Wash the zucchini well and dry with a towel. Cut off the edges and use 1cm thick washers. Put some vegetables in a deep bowl in one layer, salt with a pinch of salt. So lay out all the zucchini in layers, adding a little salt to each layer. Leave them on for 15 minutes. Rinse under running water and pat dry with a paper towel.

Sift flour into a bowl, add pepper and stir. Dip the first portion of the zucchini well in flour so that it covers all the edges and sides of the vegetables.

Preheat a skillet, pour oil on the bottom and heat. Put the zucchini in a skillet and fry over medium heat for 1-2 minutes until golden brown, then turn over and fry on the other side.
