Fried mushrooms with onions is a classic version of mushroom cooking in Russian cuisine. One has only to add sour cream and a little dry white wine to the mushrooms during the cooking process, and the mushrooms will sparkle with new tastes and a pleasant creamy aroma. Before starting cooking, we prepare mushrooms: we clean them from litter, cut off the lower part of each leg and rinse well in running water. Put the prepared mushrooms in boiling salted water and boil for 15-20 minutes over medium heat.

Throw the boiled mushrooms in a colander and leave to drain from the water for 10-15 minutes.

Set the pan to warm up on the fire, then put a piece of butter in it and dissolve it over low heat. Peel the onions, rinse and cut into thin half rings, put in a pan with butter and fry until golden brown.

Put the mushrooms in a separate frying pan with a little oil and fry over medium heat until the liquid evaporates. Then we transfer them to the onion pan, add salt and pepper, mix and fry for another 5-7 minutes.

Combine sour cream with white wine in a small container, mix well and add to the pan with mushrooms. Mix thoroughly, cover the pan with a lid and simmer over low heat for 15-20 minutes.
