Aspen mushrooms are tall mushrooms with an orange-red cap; after harvesting, a dark blue stripe forms at the cut site. Delicious, crunchy, they are equally good in a variety of cooking options. Today we will simply fry pre-boiled mushrooms in vegetable oil with the addition of salt, pepper and herbs.

We clean fresh mushrooms from earth and litter. We rinse well under a stream of cool running water.

Put the pot of water on the fire, bring to a boil, add salt and toss in the mushrooms cut into large pieces. Boil over medium heat for 15 minutes.

Throw the boiled mushrooms in a colander and leave for 10-15 minutes to drain the water.

Put the mushrooms in a preheated pan with vegetable oil, add ground pepper, reduce the heat and fry until tender for about 50-60 minutes. Remember to stir periodically.
