Sugar-free blackcurrant jelly

Such sugar-free jelly can be prepared at any time of the year, not only from fresh berries, but also from frozen ones. The cooking process will be facilitated by a microwave oven - in it, the processing of berries is faster. However, you can cook jelly over low heat on the stove. We suggest using fructose instead of sugar. A spoonful of this jelly is perfect for a morning toast or set off any dessert without breaking the dietary rules.

First you need to soak the gelatin according to the instructions on the package. To do this, pour the granules into a small bowl and fill them with cold water.

We wash and dry the black currant berries. If frozen currants are used, they must first be defrosted. We place the berries in a heat-resistant dish and put them in the microwave at maximum power for five minutes. After that, carefully take out the container with berries, using oven mitts, and pour fructose into it. Stir, close the lid and put in the microwave at maximum power. When the currant boils, cook it for one minute and take it out immediately. We put the soaked gelatin in a microwave oven at low power (300 W) and cook for 30 seconds - 1 minute, until the granules dissolve. We take the dissolved gelatin out of the microwave and pour it through a sieve into a container with currants. Stir the mixture and pour it into jars or containers. Let cool and refrigerate.

Within two hours, the jelly will harden and be ready for use.

You only need to store such jelly in the refrigerator for a week. Due to its thick consistency, it is convenient to spread it on toast, pancakes, biscuits, etc.
