Due to the fact that we cut the zucchini into small pieces, and do not grind it in a blender, the jelly turns out to be transparent, lemons add a beautiful sunny color to it and an amazing aroma. In general, having offered jelly to their households, they, like many, will allow themselves to assume that the jelly is made from pineapple - its taste is so amazing and unusual!

We wash young zucchini under running water and put on a kitchen towel so that they dry out a little. Then we remove the stalks, peel the zucchini and cut them into small cubes.

We put the zucchini in a deep container, fill it with sugar and leave it for 40-50 minutes so that the zucchini let the juice out.

Pour the resulting juice into an enamel bowl, leaving about a glass in the zucchini, add the remaining sugar to the juice and put the dishes on the fire. Bring the syrup to a boil.

Pour the juice remaining in the zucchini into a small container and dissolve the gelatin in it. Leave the gelatin to swell.

As soon as the sugar in the syrup has dissolved, put the sliced ​​zucchini in the bowl. Stir and bring the mixture to a boil over medium heat, reduce heat and cook for 40-45 minutes.

Rinse the lemons in running water and put them on a kitchen towel to dry. Then we cut them into several parts and remove the bones. Then, using a blender, grind the lemons in puree.

After 40 minutes, add lemon puree to the mass, mix and cook for another 30 minutes, then remove from heat.

Add the swollen gelatin to the hot jelly, mix thoroughly so that the gelatin is evenly distributed throughout the mass and dissolves.

We lay out the finished jelly in sterilized jars, tighten with boiled lids and leave to cool completely at room temperature. Then we put the jelly in the refrigerator. After it has cooled for 12-15 hours, it will thicken.
