Cold red currant jelly

Cold-prepared red currant jelly is a very healthy delicacy that preserves the taste and all the beneficial properties of fresh berries. This is the most gentle way of harvesting, storage is provided due to the large amount of sugar.

Sort red currant berries, wash with cold water and discard in a colander. You can clean them from twigs, or you can leave them and so on, then the cake will still be removed.

Squeeze the berries thoroughly through cheesecloth folded several times to squeeze out all the juice. In this case, you can punch them in advance with a blender (if the branches have been removed) or wipe them through a sieve.

Measure from that volume of juice, which turned out, 1 liter. Combine 1 liter of red currant juice and 1 kg of granulated sugar, mix.

When the sugar dissolves in the juice, you need to pour this mixture into sterilized jars, close the container with nylon lids. The jelly should thicken within a week. Such a dessert is stored in the refrigerator or in a dark cellar with a consistently low temperature.
